Lemon Cookies: Mix 3 cups flour, ¼ tsp salt, 1 cup and ¼ sugar. Combine these ingredients with 200 gr of butter, then 3 eggs and the zest of two lemons. Knead well and spread the dough on a board, should be 1/2 cm thick. Cut the biscuits with a cutter to taste, place them on a buttered platter and cook in a moderate oven for 8 minutes. Nuts: Mix 3 cups flour, ¼ tsp salt, 1 cup, ¼ sugar and ¾ cup chopped walnuts. Combine these ingredients with 200 g butter, then 3 eggs. Orange florets: Mix 3 cups flour, ¼ tsp salt, 1 cup and ¼ sugar. Combine these ingredients with 200 g of butter, then 3 eggs and the zest of two oranges. Knead well and spread the dough on a board, should be 1/2 cm thick. Cut the biscuits with a flower-shaped cutter, place them on a buttered platter and cook in a moderate oven for 8 minutes. Stuffed cookies: Soft 70 gr. From butter, add a cup of sugar, then a beaten egg, half a cup of milk and a half teaspoon of vanilla essence. Banana Biscuits: Soften 150 grams of butter and add a little 220 gr of sugar, then add gradually while you beat 2 eggs and half a tsp of vanilla essence. On the other hand mix 240 gr of flour, 60 gr of cornstarch, ½ tsp of baking soda and a pinch of salt. Add the dry ingredients to the moist mixture alternating with 1 cup of ripe banana puree. Spoon this mixture onto a baking sheet, must be separated by 5 cm. Sprinkle cookies with sugar and cinnamon. Bake for 12 minutes.
Chocolate Cookies: Soften 100gr of butter with 220g of sugar and then add 2 eggs, 3 sticks of melted bitter chocolate and ½ tsp of vanilla essence. Prepare the dry ingredients by mixing: 1 cup flour, ½ cup cornstarch and a pinch of salt. Combine these ingredients with the first mixture alternating with ½ cup milk and ½ cup chopped walnuts. Pour into a baking sheet and bake for 20 minutes.
German cookies: Mix and sift 300 gr of flour, ¼ tsp salt, ¼ tsp nutmeg, 1 tsp cinnamon. On the other hand beat 100 gr of butter and 1 cup of sugar, add an egg. While we continue beating add 1 tbsp lemon zest and 2 tbsp cream. Add the dry ingredients a little until they form a soft dough. Let the dough rest for one hour, then stretch it to a half cm thick, cut the cookies, place them on a baking sheet and bake for 10 minutes.
Oatmeal Cookies: Mix 2 cups flour, 2 oats, ½ teaspoon salt, cinnamon and lemon zest. In another bowl, beat 100 g butter with 1/3 cup of black sugar, 1/3 cup of common white sugar and the vanilla essence until the mixture is light and airy. Add an egg and beat until blended. Then add the butter and egg mixture to the flour and mix until blended. Do not beat too much. On a clean oven plate, arrange spoonfuls of the mixture. With wet fingers, flatten to form discs. Spice well as they become larger with cooking. Cook in a moderate oven, about 12 minutes. If you want your cookies to be crunchy, you should turn them in half the cooking time. If not, withdraw directly.
Ginger Cookies: In a bowl, sift together 350g of flour, 2 teaspoons ground ginger and 1 teaspoon of baking soda. Cut 100gr of butter into pieces and mix with the flour to form lumps. Add 150 g of sugar. Beat 4 tablespoons honey together with 1 egg and add to the flour mixture. Knead with your hands until it forms a soft dough. Stretch the dough on a floured surface to a half centimeter thick. With a cookie cutter, cut gingerbread dolls or if you do not, cut round cookies. Place the dolls on the plate. Decorate with raisins, chocolate chips or walnuts for eyes and buttons. Bake for 15 minutes, until golden brown. Let cool on a rack.
